My friend, Lily shared her banana bread recipe with me- it is moist, very easy to make, full of bananas and full of flavor! My favorite banana bread.
Very ripe bananas | 4 , mashed ((about 2 cups)) | |
Soft butter | 1 Cup (16 tbs) ((salted or unsalted, fat room temperature)) | |
Sugar | 1 2/3 Cup (26.67 tbs) ((brown, white, or a combination of the two works)) | |
Eggs | 4 | |
All purpose flour | 2 1/3 Cup (37.33 tbs) | |
Baking soda | 2 Teaspoon | |
Buttermilk/2 tbsp milk mixed with ½ tsp vinegar | 2 Tablespoon | |
Chocolate chips | 1/2 Cup (8 tbs) ((optional)) | |
Walnuts | 1/2 Cup (8 tbs) ((optional)) | |
Ground cinnamon | 1 Teaspoon ((optional)) | |
Cinnamon sugar | 1 Teaspoon ((for sprinkling (optional))) |
GETTING READY:
Preheat oven to 350°F/ 180°C.
Grease loaf pan with butter or line with parchment paper.
MAKING:
In a bowl, cream together butter and sugar until fluffy.
Add eggs and mix well.
Add flour and mix until it is incorporated.
In a small bowl, mix buttermilk and baking soda. Whisk well.
Add this mixture to prepared batter.
Add mashed banana, chocolate chips, walnuts, cinnamon and fold in the ingredients.
Pour into prepared loaf pans and sprinkle cinnamon sugar on top.
Pop into oven and bake for 45-60 minutes.
