Plain flour | 280 Gram | |
Caster sugar | 3 1/2 Tablespoon | |
Baking powder | 1 1/2 Tablespoon | |
Chilled butter | 100 Gram | |
Buttermilk | 220 Milliliter | |
Demerara sugar | 1 Tablespoon | |
Strawberries | 200 Gram | |
Balsamic vinegar | 3 Drop | |
Double cream | 200 Milliliter , whipped |
GETTING READY
1. Preheat the oven to 200 C.
2. Line a baking sheet with a baking paper and set it aside.
MAKING
2. Take flour, sugar, baking powder, baking soda and salt in a bowl and stir to combine.
3. Add baking powder and break it into small pieces and sort of breadcrumb it.
4. Pour buttermilk and combine to make a batter.
5. Drop spoonfull of batter onto the baking tray. Sprinkle demerara sugar on top.
6. Bake for 15 minutes or until golden.
7. Let the biscuits cool on a wire rack.
8. Meanwhile, macerate strawberries with sugar and balsamic vinegar.
9. Slice the biscuits in half. Spread whipped cream over the one half of the biscuit. Spoon macerated strawberries over the cream.
10. Top the biscuit with the other half. Repeat to fill all the biscuits.
SERVING
11. Put a dollop of whipped cream over a strawberry half and place it over the filled biscuits. Serve.
