Chocolate & Balsamic Roasted Red Beets

Did you know that you can make Red Velvet Cake with beets? I made one recently and it was quite good. The photos sucked so I need to redo the photo shoot but the cake itself was scrumptious.

I was really quite surprised by how well beets and chocolate played together. So, of course, I wanted to take that combo to the next level, and turn it on its head a bit. Wellhere you go!

This dish is earthy as one would expect from the beets. And it is no surprise how well balsamic compliments that flavor. The chocolate just adds a touch of sweetness to enhance the flavors you get from roasting the root veggie. I think you are going to likeno, LOVE it.

Ingredients

Red beet 1 Pound
Olive oil 3 Tablespoon
Balsamic vinegar 1/2 Cup (8 tbs)
Sugar 1/4 Cup (4 tbs)
Cocoa powder 1/4 Cup (4 tbs)
Vanilla extract 1/2 Teaspoon
Salt 1/4 Teaspoon

Directions

GETTING READY

1. Preheat the oven to 400 F.

2. Trim and peel the beets, reserve the beet greens.

3. Using a sharp knife, cut the beets into wedges.

4. Rinse the beet greens, remove the large stems and set aside to dry and roughly chop them.

MAKING

5. In a small baking dish, place the beets wedges with olive oil, mix well until all the wedges are coated.

6. Cover the dish with aluminium foil and bake in oven for about 45 minutes, or until a knife can easily pierce the largest piece.

7. In a saucepan over medium low heat, put together balsamic vinegar, sugar, cocoa, vanilla extract, and salt, and whisk until the mixture thickens.

8. In a pan, over medium-low heat, heat olive oil and saute beet greens and cook just so that the greens wilt.

9. Add the green and chocolate balsamic over the beets and toss lightly until it coats well.

SERVING
