Center Cut Beef Ribs with Apple City BBQ Sauce

his weekend I fired up the Pit Barrel to cook some center cut beef ribs and coated it with an Apple City BBQ Sauce.


Center cut beef rib 4 Pound
Olive oil 2 Teaspoon
Apple juice 2 Cup (32 tbs)
For spice rub
Salt 1 Teaspoon
Black pepper 1 Teaspoon
Chili powder 1 Teaspoon
For apple city barbecue sauce:
Ketchup 1 Cup (16 tbs)
Rice vinegar 2/3 Cup (10.67 tbs)
Apple juice 1/2 Cup (8 tbs)
Apple cider vinegar 1/4 Cup (4 tbs)
Brown sugar 1/2 Cup (8 tbs)
Soy sauce 1/4 Cup (4 tbs)
Yellow mustard 2 Teaspoon
Garlic powder 3/4 Teaspoon
White pepper 1/4 Teaspoon
Cayenne pepper 1/4 Teaspoon
Bacon bits 1/3 Cup (5.33 tbs) , ground
Grated apple 1/3 Cup (5.33 tbs)
Grated onion 1/3 Cup (5.33 tbs)
Grated green bell pepper 2 Teaspoon



1. Preheat a charcoal barbecue for about 20 minutes.

2. To make the spice rub: In a small bowl, mix together salt, pepper and chili powder.


2. Rub the beef ribs with olive oil and season with the spice rub. Hang the beef ribs in the barbecue and allow to cook for 2 hours.

3. To make the apple city sauce: In a pan over heat, add ketchup, rice vinegar, apple juice, apple cider vinegar, brown sugar, soy sauce, yellow mustard, garlic powder, white pepper, cayenne pepper, grounded bacon bits, grated apple, grated onion and grated green bell pepper, simmer until the sauce thickens.

4. After an hour, spray the beef rib with apple juice after every 20 minutes. After 2 hours wrap the beef ribs in foil with apple juice and place on the barbecue grill.

5. After an hour, unwrap and place directly on grill, coat with the prepared sauce after every 15-20 minutes for an hour.


6. Cut into pieces and serve with your choice of sauce.
