How to Brine Beef for Roasting

Today I'm showing you how to make a rich brine for making incredible roast beef. Brining helps lock in flavor and juices from the meat, as well as imparting fantastic flavors. Combined with a good sear of the meat prior to roasting, if you've never tried brining before this is going to change the way you eat roast beef!


Water 800 Milliliter
Sugar 50 Gram
Salt 50 Gram (Soaked in brine and brine discarded)
Ground ginger 1 Tablespoon
Freshly ground black pepper 1 Tablespoon
Ground cinnamon 2 Tablespoon
Star anise fruits 2
Ground cloves 1 Teaspoon
Beef 1 Pound (cut of your choice)



1. In a large pan, place together sugar, salt, ginger, pepper, cinnamon, star anise and cloves and 200 millilitre of water and stir to mix.

2. Bring the water to a boil and stir until the sugar dissolves.

3. Take the pan off the heat.

4. Pour in the remaining water and set aside to cool.

5. In a plastic zip lock bag or container, place the beef and stream the brine over the beef.

6. Seal the bag or container and refrigerate for 12 to 36 hours, to allow the brine to infuse.

7. Cook the beef as desired or sear the joint on very hot pan for 2 minutes each side and roast in preheated oven for 40 to 60 minutes, depending on desired doneness.


8. Slice and serve as desired.
