White bread slices 2 , torn into small pieces
Milk 1/4 Pint
Egg 1 , lightly beaten
Beef chuck 1 Pound , minced
Italian sausage/Freshly minced pork 4 Ounce , freshly removed from casing
Freshly grated parmesan cheese 2 Ounce
Finely chopped fresh parsley 2 Tablespoon
Olive oil 2 1/2 Teaspoon
Finely chopped garlic 2 Teaspoon (scant)
Grated lemon peel 1 Teaspoon (scant)
Grated nutmeg 1/4 Teaspoon
Salt 1 Teaspoon (scant)
Freshly ground black pepper To Taste
Olive oil/Vegetable oil 1 Tablespoon
Tomato sauce/Tomato and garlic sauce 2 Tablespoon (adjust quantity as needed)



1. In a dish, soak the pieces of bread in 1/4 pint milk for 5 minutes.

2. Squeeze them dry and discard the milk.


3. In a large bowl, combine soaked bread, the beaten egg, 1 lb. of minced beef, 1/4 lb. of Italian sausage meat, the grated Parmesan cheese and finely chopped parsley, the 2 1/2 teaspoons of olive oil, the garlic, lemon peel, nutmeg, salt and a few grindings of black pepper.

4. Use either your hands or wooden spoon to knead or beat the mixture vigorously.

5. Mix, until all the ingredients are well blended and the mixture is smooth and fluffy.

6. Shape the mixture into small balls about 1 1/2 inches in diameter.

7. On a flat tray or baking sheet, lay the meat balls out in one layer.

8. Cover tray with a sheet of plastic.

9. Refrigerate it for 60 minutes.

10. In a large, heavy frying pan, heat 3 tablespoons of olive or vegetable oil.

11. Fry meat balls 4-5 at a time over moderate heat.

12. Shake the pan constantly to roll the balls and help keep them round. (In 8 to 10 minutes the meatballs should be brown outside and show no trace of pink inside)

13. Add more olive or vegetable oil to the frying pan as needed.


14. Serve the meat balls hot with tomato sauce or tomato and garlic sauce.
