Beef Chimichangas

Ingredients

Ground beef 1 Pound
Finely chopped onion 1/2 Cup (8 tbs)
Canned refried beans 16 Ounce (1 can)
Tomato sauce 24 Ounce , divided (3 cans, 8 ounces each)
Chili powder 2 Teaspoon
Garlic 2 Clove (10 gm) , minced
Ground cumin 1/2 Teaspoon
10 inch flour tortillas 12
Melted butter/Margarine 2 Tablespoon (adjust quantity as needed)
Canned green chilies 4 Ounce , chopped (1 can)
Canned jalapeno peppers 4 Ounce , chopped (1 can)
Vegetable oil 2 Cup (32 tbs) (for deep frying)
Cheddar cheese 6 Ounce , shredded (1 1/2 cups)

Directions

MAKING

1. In a skillet add beef and cook until brown.

2. Drain out and transfer into a plate.

3. Into the skillet add onion, beans, 1/2 cup tomato sauce, chili powder, garlic and cumin.

4. Melt butter and brush one side of the tortillas with it.

5. On the unbuttered side of tortillas spoon 1/3 cup of beef mixture off-center.

6. Fold the edges close to the filling and cover the top.

7. Fold both the sides and roll up.

8. Secure with toothpicks.

9 . Keep in freezer container while preparing the sauce.

10. To make the sauce, in a saucepan mix chilies, peppers and remaining tomato sauce. Heat thoroughly.

11. Cool the mixture and transfer to a freezer container.

12. Freeze sauce and chimichangas for 3 months.

13. To serve, thaw sauce and chimichangas in the refrigerator.

14. In an electric skillet or deep-fat fryer, heat 1 inch oil to 375°.

15. Add chimichangas and fry for 1-1/2 to 2 minutes on each side until brown.

16. Drain out and keep on paper towels.

17. Warm sauce.

SERVING

18. Serve sauce over chimichangas.

19. Top with cheese.
