Easy Beef Chimichangas

Ingredients

Oil 1 Tablespoon
Lean ground beef 12 Ounce
Onion 1 Large , chopped
Green pepper 1 Large , seeded and chopped
Garlic 1 Clove (5 gm) , minced
Salt 1/2 Teaspoon
Ground cumin 1/2 Teaspoon
Chili powder 2 Tablespoon
Cayenne 1/8 Teaspoon
Refried beans 1/2 Cup (8 tbs)
Shredded monterey jack cheese 1 Cup (16 tbs)
Flour tortillas 12
Sour cream 1 1/2 Cup (24 tbs)
Frozen guacamole 12 Ounce (2 Cans, 6 Ounce Each)
Tomato and green chili relish 1/4 Cup (4 tbs) (As Required)

Directions

MAKING

1. In a large skillet heat oil, add ground beef and stir to separate until lightly browned.

2. Cook adding onion, green pepper and garlic and until onion is limp.

3. Stir in next 5 ingredients, cook over low heat, stirring constantly, until mixture is hot and fold in cheese.

4. In the center of each tortilla place 1/4 cup filling, then fold, roll tortilla around filling and fasten with wooden pick if needed.

5. In a frying pan heat 3/4 inch of oil to 370° and fry the tortillas until lightly brown, turning as needed.

SERVING

6. Top with sour cream, guacamole and relish and serve.
