GETTING READY
1. Preheat the oven to 450 F.
MAKING
2. Make slits in the beef, insert garlic cloves into beef. Season with salt and pepper.
3. Sear the roast in the oven for about 10 minutes.
4. Reduce oven temperature to 275 F and cook until the roast reaches the desired temperature.
5. Remove the roast and cover it loosely with a tin foil. Let it rest.
6. Bring roasting pan to boil on the stove top. Add wine and deglaze the pan. Pour more wine and sodium reduced beef broth.
7. Skim off the fat and let it reduced until it thickens.
8. Add cornstarch dissolved in cold water and cook to thicken further.
SERVING
9. Carve roast and serve with this sauce.
