Betty's Green Beans with Parmesan-Pine Nut Topping

In this video, Betty demonstrates how to make Green Beans with Parmesan-Pine Nut Topping. This is an easy way to dress up green beans for your holiday table.


Fresh green beans 1 Pound , strings removed and ends cut off
Water 2 Cup (32 tbs) (as needed to cook beans)
Fresh flat leaf parsley 1/4 Cup (4 tbs) , chopped finely
Garlic clove 2 , mince
Pine nuts 1/4 Cup (4 tbs) , toasted
Zest of lemon 1
Shaved parmesan cheese 1/4 Cup (4 tbs) (shredded or grated)
Extra virgin olive oil 1 Ounce
Table salt 3/4 Teaspoon (or to taste)
Ground black pepper 1/4 Teaspoon (or to taste)



1. In a Dutch oven, pour water, a little more than half the way up. Cover with lid and bring water to a boil.

2. Add green beans, return to a boil and cook, covered for 3-5 minutes, or until green beans are crisp-tender. Drain and plunge beans into ice cold water. Stir until beans are absolutely cooled. Drain, pat dry with paper toweling and set aside.

3. In a medium-sized bowl, mix parsley, garlic, toasted pine nuts, lemon zest, and Parmesan cheese.

4. In the same Dutch oven, heat olive oil and add cooled green beans. Do this step just before serving time. Cook for 2 minutes, tossing occasionally. Remove the Dutch oven from heat when green beans are heated through and coated with oil.


5. Place green beans on platter and sprinkle Parmesan pine nut mixture, salt and pepper on top.


6. Serve immediately and enjoy!
