Hot Chili with Beans and Tomato

Ingredients

Extra virgin olive oil 2 Tablespoon
Ground hamburger 1 Pound
Onion 1
Garlic 2 Clove (10 gm) , minced
Green pepper 1 , seeded and chopped
Jalapeno 1 , seeded finely chopped
Celery stalks 3
Chili powder 1 1/2 Tablespoon
Ground roasted cumin 2 Teaspoon
Garlic powder 1 1/2 Teaspoon
Cayenne 1 Teaspoon (Red Pepper)
Salt To Taste
Pepper To Taste
Tomato sauce 14 1/2 Ounce (1 Can)
Diced fire roasted tomatoes 14 1/2 Ounce (1 Can)
Canned red kidney beans 14 1/2 Ounce , drained but not rinsed
Water 2 Cup (32 tbs)
Parmesan cheese rind 1
Fresh basil 2 Tablespoon , chopped

Directions

MAKING

1) Drizzle 2 tablespoons of extra virgin olive oil at the bottom of a cooking pot, turn heat to a high and place the hamburger in the pot along with the chili powder, cumin, garlic powder, and cayenne.

2) Allow the hamburger to brown. Once the hamburger browns, put in the onions and garlic and turn the heat down to a medium-high for about 3-4 minutes until onions become a translucent.

3) Add green pepper, jalapeno, celery and stir for another 3-4 minutes.

4) Finally, add the tomato sauce, fire-roasted tomatoes, kidney bean, water and the rind of parmesan cheese.

5) Turn the heat to medium-low to low and allow soup to simmer for at least 1 ½ - 2 hours (the longer the better).

SERVING

6) When ready to serve, take out the cheese rind and stir in fresh basil.

7) Serve with your favorite topping: Frito chips, shredded cheese, diced red onion and/or sour cream.
