Black Bean Jalapeno Salad

Ingredients

Cooked black beans/2 can, 16 ounce each, rinsed and drained 4 Cup (64 tbs)
Red bell peppers 2 , diced
Yellow bell pepper 1 , diced
Green bell peppers 2 , diced
Scallions 1 Bunch (100 gm) , sliced
Jalapeno peppers 2 , seeded and minced
Coriander 1/2 Teaspoon
Corn oil 2 Tablespoon
Lime juice 2 Tablespoon
Salt 1/2 Teaspoon
Black pepper 1/4 Teaspoon
Cayenne 1 Pinch

Directions

MAKING

1. In a bowl place the black beans.

2. Combine jalapeno pepper, lime juice, salt and pepper, sweet bell pepper and scallions.

3. Toss till the beans are coated well.

SERVING

4. Serve black bean jalapeno salad with additional cayenne.
