Barbecued Meat and Beans

Ingredients

White beans 1 Pound
Water 1 Cup (16 tbs) (adjust quantity as needed)
Spicy bulk sausage 4 Ounce
Bacon 4 Ounce , chopped
Barbecued chicken 1 Large
Barbecued lamb shanks 3
Smoked pork 1 Pound
Celery stalks 1 , sliced
Chopped parsley 2 Tablespoon
Italian seasoning 1/8 Teaspoon
Oregano 1/8 Teaspoon
Salt 1/2 Teaspoon
Pepper 1/4 Teaspoon
Onions 2 , sliced
Garlic 2 Clove (10 gm) , minced
Bay leaf 1
Chicken broth 1 Quart
Bacon strips 4

Directions

GETTING READY

1. Preheat the oven at 300°.

2. Soak beans covering with water overnight or quick-soak.

3. Bone the chicken, lamb and pork and keep aside.

MAKING

4. Then simmer the beans in a saucepan for about 1 1/2 hours in soaking water.

5. In a pan fry sausage, add to beans and then add bacon.

6. add the boned meats to the beans.

7. simmer adding remaining ingredients except bacon strips for about 1 1/2 hours.

8. Remove and discard bay leaf.

9. Line a large casserole with bacon strips, pour in bean mixture and top with more bacon.

10. With cover bake in the preheated oven for 1 1/2 hours.

FINALIZING

11. Uncover and bake 1/2 hour more.

SERVING

12. Serve the baked beans with the bacon strips brown on the top.
