Barley with Chestnuts and Dried Fruit

Ingredients

Pearled barley 1 Cup (16 tbs)
Water 2 Cup (32 tbs)
Black pepper 2 Teaspoon
Salt 1 Teaspoon
Olive oil 1 1/2 Teaspoon
Peeled chestnuts 1 Cup (16 tbs)
Figs 1/2 Cup (8 tbs)
Apricots 1/2 Cup (8 tbs)
Prunes 1/2 Cup (8 tbs)
Dried chile pepper 1
Water 1 Cup (16 tbs)

Directions

MAKING

1. Boil water and add barley.

2. Lower the heat, cover and simmer for 50 minutes till the barley gets tender and water is well absorbed.

3. Add olive oil, black pepper and salt. Stir well.

4. In a 2 quart pot add the peeled chestnuts, water and chile pepper.

5. Boil, keeping the pot covered. Simmer for 30 minutes. The liquid needs to be absorbed and the fruit softened.

FINALIZING

6. Place barley out on plates and make an indentation in middle.

7. Spoon the fruits in it.

SERVING

8. Serve Barley With Chestnuts And Dried Fruit spinkled with black pepper.
