Fruity Barley Delights

Ingredients

Pearl barley 4 Ounce
Orange 1
Dried apricots 8 Ounce
Cointreau/Orange flower water 1 Tablespoon
Cottage cheese 4 Tablespoon
For coating
Sesame seeds 2 Ounce
Caster sugar 2 Tablespoon
Allspice 1 Teaspoon

Directions

GETTING READY

1. Start by peeling the oranges and cutting them into quarters, also remove the pips

MAKING

2. In a pot, pour pearl barley along with water and boil it, and cook for 30 minutes, till tender

3. In a mincer, put orange flesh along with the dried apricots also add cointreau or orange flower water, cottage cheese and ground almonds and mix properly

4. Once barley is cooked, drain it properly , let the pan steam dry for a few minutes, then add to other ingredients

5. Take the mixture and knead it with fingers to give an even consistency

6.Form the mixture into 24 small balls about 1 inch in diameter

7. On a plate, mix together sesame seeds, sugar and allspice, take the balls and roll it in the mixture till it's well coated, and place in refrigerator till well chilled

SERVING

8. Serve with whip cream
