Pumpkin Oatmeal Bars

Ingredients

Oats 1 Cup (16 tbs) (Quick
All purpose flour 1 Cup (16 tbs)
Lightly packed brown sugar 1 Cup (16 tbs)
Baking powder 1 Teaspoon
Salt 1/4 Teaspoon
Canned pumpkin 1 Cup (16 tbs)
Egg 1 Large , lightly beaten
Butter/Margarine 1/2 Cup (8 tbs) , melted (1 stick)
Vanilla extract 1 Teaspoon
Dark seedless raisins 1/2 Cup (8 tbs)
Unsalted dry roasted peanuts 1/2 Cup (8 tbs) , coarsely chopped

Directions

GETTING READY

1) Lightly grease a 9-by-9-by-2-inch baking pan.

2) Preheat the oven to 350F.

MAKING

3) In medium bowl, mix together oats, flour, brown sugar, baking powder and salt until well incorporated.

4) Make a well in center, and place in pumpkin, egg, butter and vanilla;.

5) Stir in the pumpkin mixture until dry ingredients are moistened.

6) Mix in the raisins and peanuts.

7) Transfer the pumpkin mixture the pan and smear evenly.

FINALIZING

8) Bake in the oven for 35 to 40 minutes, or until firm and lightly browned.

9) Remove from the oven and allow to cool in pan on wire rack.

SERVING

10) Cut the baked mixture into bars and use as desired.
