PBJ Bars With Chef Baby!

Healthy fruit, oat and nut energy bars for toddlers! These PBJ bars have oatmeal, dried fruit, and nuts for a naturally sweet snack your toddler will love. PBJ Energy Bars recipe below.

Ingredients

Old fashioned rolled oats 2 1/4 Cup (36 tbs) , divided (plus extra for topping)
Dried fruit 1 Cup (16 tbs) (raisins, figs, dates, etc)
Melted butter/Coconut oil 4 Tablespoon , divided (plus extra for topping)
Peanut butter 3 Tablespoon
Vanilla extract 1 Teaspoon
All fruit jam 2 Tablespoon
Chopped roasted peanuts 2 Tablespoon

Directions

GETTING READY:

Preheat oven to 350°F.

Line baking pan with parchment paper as shown in the video.

Cover dried fruits with boiling water and let it sit aside for 5 minutes.

       

MAKING:                        

In a food processor, pulse 1 ¾ cups of oats and once done, transfer to a bowl.

Add soaked (drained) fruit, 2 tablespoons of butter, peanut butter, vanilla and pulse until well combined.

Add oats and mix well.

Add 2-4 tablespoons of soaking liquid to adjust consistency of dough.

Transfer to baking dish and press well to the bottom of the dish.

Spread jam over it.

Combine remaining butter with oats and peanuts. Sprinkle the mixture over layer of jam and press it.

Pop into oven and bake for 15-20 minutes.

Once done, allow to cool completely and cut into 2” squares.
