Key Lime Bars

Lynn demonstrates Key Lime Bars. These are very easy to make and delicious for a dessert or snack. Adapted from Publix. Makes 16

Ingredients

Unsalted butter 6 Tablespoon , melted
Lime 2 , zested and zest grated
Egg yolks 4 Large
Sweetened condensed milk 14 Ounce (1 can)
Key lime juice 1/2 Cup (8 tbs)
Frozen nondairy whipped topping 2 Cup (32 tbs) (such as Cool Whip, thawed)
Gingersnap cookies 24 , finely crushed
Sugar 1/4 Cup (4 tbs)
Cooking spray 1

Directions

GETTING READY:

Preheat oven at 325F.

Grease baking dish with cooking spray.

MAKING:

In a bowl, combine lime zest, egg yolks and whisk well.

Whisk in condensed milk, key lime juice and set aside.

Set topping to thaw.

In a food processor, process cookies until it turn into crumbs.

In a bowl, combine crumbs (reserving 2 tbsp of crumbs for garnish), butter, sugar and mix well.

Transfer the mixture into baking pan and press well as shown in the video.

Transfer the lime juice mixture onto crust and pop into oven.

Bake for 20-25 minutes or until lightly brown.

Allow to cool completely and cut before serving.

Top with whipped topping and reserved crumbs.

SERVING:
