How To Make Lemon Bars

Calling all lemon lovers! Pucker up for some lemon bars! These have layer of crisp, buttery crust and a layer gooey, tart lemon. The best lemon bars ever? Yes.


For the crust:
All purpose flour 3/4 Cup (12 tbs)
Sugar 1/4 Cup (4 tbs) (confectioners')
Cornstarch 1 1/2 Tablespoon
Salt 1 Teaspoon
Unsalted butter 1/3 Cup (5.33 tbs) (cold)
For the filling:
Granulated sugar 1 Cup (16 tbs)
Eggs 2
All purpose flour 1 1/2 Tablespoon
Vanilla 1/2 Teaspoon
Freshly squeezed lemon juice 1/3 Cup (5.33 tbs)
Milk 2 1/2 Tablespoon
Salt 1 Pinch
Powdered sugar 3 Tablespoon (for dusting)



Preheat oven to 350°F/ 180°C.

Grease square pan with butter.



In a large bowl, combine flour, sugar, cornstarch, salt and whisk well.

Add butter and blend using a pastry blender.

Press the mixture onto bottom of square to set as crust. Pop into freezer and allow to set for 15-30 minutes.

Then pop into oven and bake for 20 minutes.

In a bowl, whisk together eggs, sugar and flour. Add vanilla, milk, lemon juice and blend well.

Pour onto crust, pop into oven and bake for 15-20 minutes.

Cut into small squares after cooling. Dust with powdered sugar on top before serving.
