Gluten Free Power Bars

Created with ease using the Boss, these gluten-free bars are a healthy energy booster full of goodness, made with coconut water, vanilla and almonds.


Coconut water 1/2 Cup (8 tbs)
Almonds 2 Cup (32 tbs)
Sunflower kernels 1 Cup (16 tbs)
Unsweetened cocoa powder 1/2 Cup (8 tbs)
Dried blueberries 1 Cup (16 tbs)
Pistachios 1 Cup (16 tbs) , shelled
Cashews 2 Cup (32 tbs)
Honey 1/2 Cup (8 tbs)
Vanilla protein powder 1 Cup (16 tbs) (optional)
Vanilla extract 1 Teaspoon
Agave nectar 1/4 Cup (4 tbs)



Preheat the oven to 325°F.

Line baking tray with parchment paper.



In a blender jug, combine pistachios, sunflower kernels, cashews and almonds. Process using mix setting for 20-30 seconds.

Add protein powder, coconut water, vanilla extract, agave nectar, honey and cocoa powder. Process using mix setting for 20 seconds.

Fold in dried blueberries and transfer mixture to lined baking tray.

Flatten to half inch thick layer and pop into oven.

Pop into oven and bake for 20 minutes.

Allow to cool and cut into bars.



Serve and enjoy!
