GETTING READY
1. Preheat oven to 350 degree F.
2. Line an 8x8 baking pan with parchment paper and set aside.
MAKING
For Apple Pie Filling:
3. In a large skillet, combine apple, cornstarch, cinnamon, salt, lemon juice, water, and brown sugar (Truvia brown sugar blend used). Stir frequently and cook over medium high flame for 12-15 minutes or until the apples soften.
4. Remove skillet from heat and set aside to cool.
For Dough:
5. In a large bowl, combine flour, brown sugar, sea salt, and baking powder. Whisk to combine.
6. Add cold butter and use your fingertips to rub it into the flour.
7. Add beaten egg and mix to moisten the dough.
8. Next, add in the heavy cream and toss to combine. At this point the dough might look crumbly but if you gather a handful with your fingers and press, it should hold together.
9. Divide the dough in half and press one half into the bottom of the lined baking pan.
10. Add apple pie filling on top and spread evenly.
11. Crumble the remaining half of the dough on top and bake in the center of the oven for 50 minutes or until lightly golden on top.
12. Remove from oven and let cool before you cut into squares.
