Bacon Hasselback Potatoes

Tired of boring baked potatoes? Bring something interesting to the table with these Bacon Hasselback Potatoes.

Ingredients

Thick bacon slices 2 , freeze (or Parma ham)
Baking potato 2 Medium
Unsalted butter 3 Tablespoon , melt (or olive oil)
Garlic paste 1 Tablespoon
Salt To Taste
Freshly ground pepper To Taste
Scallion 2 , finely chopped

Directions

GETTING READY

1. Preheat the oven to 350 degree F.

2. Using a sharp knife, make crosswise cuts in each potato, about 1/8- inch apart, stopping about 1/4 inch from the bottom as shown in the video.

3. Line a baking sheet with parchment paper and place potatoes on it.

4. Cut frozen bacon crosswise into pieces.

MAKING

5. Insert pieces of the frozen bacon into the cuts of each potato.

6. In a small bowl melt butter and add garlic paste to it. Mix well.

7. Baste potatoes generously with melted butter. Season with salt and pepper.

8. Pop the baking sheet in oven and bake for 1 hour or until the outsides are browned and crisp and the insides are soft.

SERVING

9. Garnish with chopped scallions and serve immediately.
