Bacon and Egg Fricassee

Eggs 3
Bacon (streaky) rashers 8
Butter 2 Ounce
Milk 1/2 Pint
Salt To Taste
Pepper To Taste
Mixed herbs 1/2 Teaspoon
Browned crumbs 1/4 Cup (4 tbs) (Use As Required)
Parsley 1/4 Bunch (25 gm) (Use As Required)



1) Preheat the grill.

2) Brush 2 individual dishes with butter.

3) Trim and chop 4 bacon rashers, roll 4 rashers and thread into a skewer.


4) Place the bacon rolls under a heated grill until done.

5) In a pan, boil the eggs in water for 10 minutes.

6) In a skillet, saute the chopped bacon in 1 oz butter until crisp, remove with a slotted spoon, drain and keep aside.

7) In the skillet drippings, stir in the flour.

8) Then gradually stir in the milk and bring the sauce to a boil.

9) Season thoroughly with salt, pepper.

10) Then stir in the fried bacon along with the mixed herbs.

11) Shell the eggs, slice and arrange them in the greased dishes.

12) Spoon over the sauce and sprinkle with the crumbs.

13) Dot with 1 oz butter and place under the grill until browned.


14) Garnish the Bacon Fricassee with bacon rolls and parsley and serve.
