Asparagus Pottage

Beautiful and delicious...AND oh so easy to make!


Eggs 12
Finely grated carrot 2
Butter 2 Tablespoon
Whole milk 1 Cup (16 tbs)
Self raising flour 1 Cup (16 tbs)
Salt To Taste
Pepper To Taste
Sweet onion 1
Thyme 1/2 Cup (8 tbs) (handful)
Chives 1/2 Cup (8 tbs) (handful)
Salami slices/Ham /cooked bacon 6 , thinly sliced
Asparagus spears 2 Dozen , cut into 1 inch pieces
Shredded sharp white cheddar cheese 2 Cup (32 tbs)



Preheat the oven to 350F.

Grease bundt pan with butter and keep it ready.


In a frying pan, melt butter and sauté onion and carrots in it for 5 minutes or until they soften. Close with a lid and allow to cook well. Once done, allow to cool well.

Parboil asparagus pieces for 2 minutes and keep it ready.

In a large bowl, combine eggs, thyme, chives, asparagus, salami, flour, milk and whisk well.

Add cooked onion-carrot mixture, cheese, black pepper, salt and mix well.

Transfer the pottage batter to greased pan and top with cheese.

Pop into oven and bake at 350F for 45 minutes.

Garnish with fresh herbs.
