Noodles with Peanut Sauce by Tarla Dalal

Ingredients

For peanut sauce
Water 1/2 Cup (8 tbs)
Grated jaggery 1/4 Cup (4 tbs)
Peanut butter 2 Tablespoon
Tamarind pulp 2 Teaspoon
Salt To Taste
Soya sauce 1 Teaspoon
Other ingredients
Oil 1 1/2 Tablespoon
Thinly sliced spring onion whites 1/2 Cup (8 tbs)
Shredded purple cabbage 1/4 Cup (4 tbs)
Beans sprouts 1/4 Cup (4 tbs)
Thinly sliced carrots 1/2 Cup (8 tbs)
Paneer cubes 1/2 Cup (8 tbs)
Boiled flat rice noodles 1 1/2 Cup (24 tbs)
Freshly ground pepper To Taste
For garnish
Finely chopped spring onion greens 1 Tablespoon

Directions

GETTING READY

For Peanut Sauce:

1.In a small pan, boil 1/2 cup of water. Add jaggery, peanut butter, tamarind pulp, salt and soya sauce. Mix well and simmer for a few minutes or until the sauce thickens. Remove the pan from flame and set aside.

MAKING

2.In a broad non-stick pan, heat oil, add spring onion whites and saute over high flame for 2-3 minutes or until translucent.

3.Add cabbage, beans sprouts, carrot, and paneer. Stir and cook for 2-3 minutes.

4.Add noodles and salt. Stir occasionally and cook for 2-3 minutes.

5.Stir in peanut sauce and pepper powder. Stir fry for 1-2 minutes.

SERVING

6.Serve immediately garnished with spring onion greens.
