How to Make Korean Chicken Soup 삼계탕

An easy one pot meal of tender chicken, thick milky porridge, and soft chestnuts, ginseng, and dates. Called Sam-gye-tang in Korean.

Ingredients

Cornish hen 1
Sweet rice 1/2 Cup (8 tbs)
Dried ginseng 2
Chestnuts 3
Red dates 4
Green onion 1 , chopped

Directions

GETTING READY

1. In a medium bowl, soak the sweet rice, ginseng, chestnuts and dates for about an hour.

2. Rinse the rice and other ingredients and set aside.

3. Clean the Cornish hen and trim excess fat.

MAKING

4. Fill the hen with the soaked ingredients. Close up the hen and tie up the legs as shown in the video.

5. Tuck the hen into a small pot and add in the remaining soaked ingredients. Fill the pot with water and simmer for an hour. Half way in, rotate the hen and cover with more water if necessary.

6. Garnish with green onions and boil for a few minutes.

SERVING

7. Ladle out the soup and serve.
