Vietnamese Caramelized Pork - Thit Kho

Fish sauce is one of my favorite weapons to have in the pantry. It packs a powerful umami punch and can be used from simple dressings or to bring dimension to soups and braises. Today, I'm gonna show you a simple Vietnamese pork recipe that combines fish sauce and caramelized sugar to achieve an incredible flavor in a short amount of time. Sugar 1/2 Cup (8 tbs)
Water 1 Cup (16 tbs)
Fish sauce 1 Tablespoon
Pork belly/Boneless pork shoulder 1 Pound , cut
Salt 1/2 Teaspoon
Shallot 2 Large , chopped
Scallion greens 1 , thinly sliced
Chopped fresh cilantro 1 Tablespoon



1. Line the bottom of a medium pot with sugar. Place it over medium low flame and cook until the sugar melts and becomes amber colored.

2. Add water and fish sauce. Stir in meat and mix until well coated. Bring to a boil.

3. Season with salt, simmer over medium low flame for at least 25 minutes or until pork is fork tender.

4. Stir in shallot and cook for 5-7 minutes or until translucent. Cook until sauce thickens.


5. Serve over rice garnished with cilantro and scallion.
