Shortrib Kimchi Jjigae

There's nothing better on a snow day than staying indoors and digging into a hot and hearty comfort meal. This Shortrib Kimchi Jjigae is just that. Meaty, mouthwatering, fork-tender beef shortribs braised in a kimchi broth with caramelized onions and chewy tteok. Add some fresh steamy rice and prepare for a meal that will make you wish every day could be a snow day.


Yellow onion 2 Pound , thinly sliced
Canola oil 2 Tablespoon
Butter 2 Tablespoon
Beef short ribs 3 Pound (2
Kimchi 2 Cup (32 tbs)
Anchovy stock 700 Milliliter (or Japanese dashi)
Korean rice cake 2 Cup (32 tbs) (tteok)
Sesame oil 2 Tablespoon
Garlic clove 5 , minced
Salt and pepper To Taste
Mirin 1/4 Cup (4 tbs)
For garnish
Beans sprouts 4 Teaspoon (fresh)
Julienned carrot 4 Teaspoon
Green onion 4 Teaspoon
White and black sesame seeds 4 Teaspoon



1. In a large cast iron skillet, heat canola oil and butter over high flame.

2. Add onion, turn the heat down to medium, and cook until the onion is caramelized and brown. Into a pressure cooker or Dutch oven, transfer the onion and set aside.

3. Season the meat with salt and sear in the same skillet over high heat until browned on all sides. Place meat on top of the onion in cooker/Dutch oven.

4. Deglaze the skillet with kimchi. Stir and cook until the fond comes out from the bottom of the skillet. Transfer it into the cooker/Dutch oven over the ribs.

5. Pour anchovy stock into the cooker, cover with lid and cook for one hour. If using a Dutch oven, cover and simmer for 2-2.5 hrs or until done.

6. Near the end of the cooking time, heat a pan with the sesame oil and saute minced garlic for about 30 seconds. Add tteok (rice cake) and cook until lightly browned.

7. Add the tteok to the cooker/Dutch oven and let simmer for about 5 minutes until the tteok (rice cake) is done.

8. Taste and adjust seasoning of salt and pepper. Add mirin and give it a good stir.


8. Into individual serving bowls, ladle Jjigae and place under broiler for 5 minutes.


9. Garnish with fresh bean sprouts, carrot, green onion, and sesame seeds. Serve with steamed rice and enjoy!
