J's Nasi Goreng

Red curry paste is a great ingredient to have handy. It lasts practically forever in the fridge and is extremely versatile. I use it in many different recipes, including this one for my version of the famous Indonesian fried rice, Nasi Goreng. There are so many varieties of Nasi Goreng depending where you go and who's making it.

I love this dish because it's flavourful, aromatic, spicy, and it's the perfect way to use up leftover vegetables. Throw in some bacon lardons or sausage, top with a fried egg, and you have yourself a delicious breakfast. So what are we waiting for? Let's cook Nasi Goreng!

Ingredients

For the sauce
Red curry paste 1 Tablespoon
Kecap manis 1 Tablespoon (sweet soy sauce, ABC brand is the best)
Sambal oelek 1 Teaspoon (garlic chili paste to taste)
Vegetable oil 1 Tablespoon
Fresh garlic 1 Teaspoon , minced
Fish sauce 1 Teaspoon
For the rice
Vegetable oil 2 Tablespoon
Shallot/Red onion 2 Tablespoon , chopped finely
Fresh garlic 2 Tablespoon , minced
Cooked rice 3 Cup (48 tbs) , cooled (or cold left over rice)
Cooked vegetables 1/2 Cup (8 tbs) , cooled (any left over vegetables like mushrooms, carrots, etc)
Cooked meat 1/2 Cup (8 tbs) , cooled (any left over meat)
Salt To Taste (Optional)
For the garnish
Green onion/Cilantro 2 Tablespoon , chopped finely
Lime wedges 4 Medium (as required)

Directions

GETTING READY

1. In a bowl add all the ingredients of the sauce and whisk till combined well. Set aside.

MAKING

2. Heat a wok till smoking hot. Add the shallots and garlic and fry for around 30 seconds. Put in the rice and continue to stir till all the clumps are broken and cook for around 2 minutes.

3. Add the sauce and mix well till combined. Pt in the vegetables and meat and continue to mix and cook till they are done. Turn off the heat.

SERVING

4. In a serving plate, serve the rice hot garnished with chopped green onions or cilantro, dash of lemon and sunny side up fried egg and any pickle if desired.

TIPS

Season the rice with salt if desired.
