How to Make Halibut with a Light Mango Salsa

Make pan fried halibut with a light, refreshing Asian mango salsa with tomato, red onion and cilantro, just placed over the delicate pan fried fish.

Ingredients

Halibut fillet 1 Pound , cut into 4 inch pieces
Salt To Taste
Pepper To Taste
Olive oil 1/2 Tablespoon
For the salsa
Mango 2 Medium , peeled, diced (Thai Mango)
Tomato 2 Medium , diced
Red onion 1/2 Medium , diced
Cilantro leaves 1 Cup (16 tbs)
Garlic 2 Clove (10 gm) , minced
For the salsa dressing
Lemon 2 Medium , juiced
Rice vinegar 1 Tablespoon
Olive oil 1 Tablespoon
Sugar 1 Teaspoon
Salt 1/2 Teaspoon
Pepper 1/2 Teaspoon

Directions

GETTING READY

1. Sprinkle salt and pepper over the halibut pieces on both the sides. Set aside.

MAKING

For The Salsa

2. In a bowl add mango, tomato, onion, cilantro and garlic. Mix well.

3. In another bowl add all the ingredients under “For Salsa Dressing” and whisk well till combined. Pour it over the salsa and mix well.

For The Halibut

4. In a pan heat olive oil. Place the halibut pieces well spaced without touching each other. Cook them on both the sides till golden brown. Flip carefully as Halibut is delicate.

SERVING

5. In a serving plate, place a piece of pan fried halibut. Top it generously with the salsa and serve fresh.
