This bright orange Roasted Carrot Hummus is perfect for everything from school lunch to dinner parties!
Canned chickpeas | 15 Ounce , rinsed, drained | |
Lemon juice | 2 Tablespoon | |
Peanut butter/Almond butter | 2 Tablespoon | |
For the roasted carrot | ||
Carrots | 2 , cut into 2 inch pieces | |
Garlic | 1 Clove (5 gm) , peeled | |
Olive oil | 1 Teaspoon | |
Salt | To Taste |
GETTING READY
1. Place the carrots on a baking sheet along with garlic. Drizzle the olive oil and season with the salt. Toss well.
2. Roast in preheated 400 degrees F for 40 minutes.
MAKING
3. In a food processor, add in all the ingredients and blend well.
SERVING
4. Serve the carrot hummus with fresh veggies.
