Roasted Carrot Hummus - Healthy School Lunch

This bright orange Roasted Carrot Hummus is perfect for everything from school lunch to dinner parties!

Ingredients

Canned chickpeas 15 Ounce , rinsed, drained
Lemon juice 2 Tablespoon
Peanut butter/Almond butter 2 Tablespoon
For the roasted carrot
Carrots 2 , cut into 2 inch pieces
Garlic 1 Clove (5 gm) , peeled
Olive oil 1 Teaspoon
Salt To Taste

Directions

GETTING READY

1. Place the carrots on a baking sheet along with garlic. Drizzle the olive oil and season with the salt. Toss well.

2. Roast in preheated 400 degrees F for 40 minutes.

MAKING

3. In a food processor, add in all the ingredients and blend well.

SERVING

4. Serve the carrot hummus with fresh veggies.
