Black Pepper Chicken

This is what we call Indian Chinese, with a hint of garam masala, this dish is perfect fusion between the two growing economies of today- India and China.

Ingredients

Broccoli flowerets 1/2 Pound
Black pepper powder To Taste (For Seasoning)
For marinating chicken
Boneless chicken thighs 1 Pound
Yogurt 1/2 Cup (8 tbs)
Black pepper powder 1/2 Teaspoon
Garam masala 1 Teaspoon
For coating chicken
Cornflour 1 1/2 Tablespoon
Black pepper powder 1/4 Teaspoon
For stir fry
Oil 1 1/2 Tablespoon
Oyster sauce 2 Tablespoon
Water 5 Tablespoon (2 plus 3 divided)
Garlic 3 Clove (15 gm)
Salt To Taste

Directions

GETTING READY

1.Marinate chicken with yogurt, black pepper and garam masala for 2-3 hours in the refrigerator.

2.Steam broccoli florets and keep it aside.

MAKING

3.Take the chicken pieces out from the marinade and coat them with cornflour and black pepper. Discard marinade.

4.Heat oil in a skillet, saute minced garlic for a couple of minutes. Add chicken pieces and saute them at high heat for 7-10 min or until the chicken changes color (slight brown). Cover and cook for 7 minutes or until the chicken is tender. Add 2 tablespoon water, if you think chicken is sticking to the pan.

5.Dissolve cornflour with 3 tablespoon water and add to chicken. Stir in oyster sauce, salt and pepper. Let it simmer such that the gravy thickens a bit and coats the chicken well. Remove the pan from heat.

SERVING

6.Arrange steamed broccoli on the sides of the serving dish, place cooked chicken in the middle. Season with pepper and serve hot with Noodles or Fried Rice.
