This here is my recipe for beef satay with a peanut dipping sauce. This cook I am using spices that I have not really used before and wanted to play around with flavors. Enjoy!

Rib eye steak 2
Brown sugar 3 Tablespoon
Coriander 2 Tablespoon
Turmeric 1 Tablespoon
Cumin 1 1/2 Teaspoon
Black pepper 1 1/2 Teaspoon
Fish sauce 3 Tablespoon
Vegetable oil 3 Tablespoon
For peanut sauce
Vegetable oil 5 Tablespoon
Garlic cloves 3 , chopped finely
Shallot 1 Small , chopped finely
Lemongrass stalk 1 , diced
Thai chili peppers 3 , diced
Creamy peanut butter 3/4 Cup (12 tbs)
Unsweetened coconut milk 1 Cup (16 tbs)
Soy sauce 2 Tablespoon
Fish sauce 1 Teaspoon
Lime juice 1 Teaspoon
White sugar 2 Tablespoon
Water 3/4 Cup (12 tbs)
Chopped cilantro 10 Gram (handful)

For Beef Satay:

1. Remove the fat and cut steak into ½-1-inch strips and put in a bowl.

2. Add brown sugar, coriander, turmeric, cumin, black pepper, fish sauce, and vegetable oil into the bowl with meat. Mix to coat well. Pop in refrigerator for few hours to marinade.

3. Thread beef pieces into the soaked bamboo skewers.

4. Place skewers on grill. Lay a tin foil below exposed skewers as shown in the video to avoid burning. Cook for about 3-4 minutes each side.

For Peanut Sauce:

1. Place a pan on flame and pour oil in it.

2. Add garlic clove, shallot, lemongrass, and Thai chili pepper. Saute until fragrant.

3. Stir in peanut butter, coconut milk, soy sauce, fish sauce, and lime juice. Mix well.

4. Add sugar, and water. Mix and let it simmer to get desired consistency.

5. Sprinkle cilantro and transfer it to a bowl.

6. Garnish with cilantro and serve beef satay hot with peanut sauce.
