Cinnamon Spiced Nutty Brown Rice

This Asian Style Cinnamon spiced nutty brown rice is definitely a treat to the senses. Traditional spices impart great flavor to the wholesome brown rice, while pine nuts add a desirable crunch to every bite. Bean sprouts may also be added to up the nutritional value.


Sesame oil 1 Tablespoon
Onion 1 , finely chopped
Garlic cloves 4 , miced
Ginger piece 1 Small
Raisins 1/4 Cup (4 tbs)
Cinnamon powder 1 Teaspoon
Red chili flakes 1 Teaspoon
Salt To Taste
Low sodium chicken broth 1 3/4 Cup (28 tbs)
Long grain basmati brown rice 1 Cup (16 tbs)
Pine nuts 1 Ounce , roasted (Broken)
Cilantro 1/4 Cup (4 tbs) , finely chopped
Spring onion greens 1 Cup (16 tbs) , chopped



1. Heat the sesame oil in a pot over medium heat. Saute the onions; add ginger and garlic, saute for 2-3 minutes or until onions are beginning to turn translucent.

2. Add rice, raisins, cinnamon, salt, and red chili flakes. Give it all a stir before pouring in the chicken broth.

3. Turn heat to a high and bring rice mixture to a boil. Once it's reached boiling, reduce to a simmer, add the pine nuts, cilantro and 3/4 th of the spring onion greens at this stage, pop the lid on, and cook for 12 minutes.

4. Remove lid, sprinkle with remainder of chopped spring onion greens and fluff.


5. Serve hot with accompaniment of your choice and a tall glass of chilled iced tea.
