Indian Turkey Kofta

A kofta with bursting flavors.

Ingredients

Canola oil 1 Tablespoon
Onion 1 Small , finely diced
Garlic 2 Clove (10 gm) , mince
Fresh ginger 1 Tablespoon , grated
Curry powder 2 Teaspoon
Cumin 1 Teaspoon , ground
Hot pepper flakes 1 Teaspoon
Raw cashew 1 Cup (16 tbs) , ground
Tomato 1 Can (10 oz) , crushed
Salt 1 Teaspoon
Low fat plain yogurt 3/4 Cup (12 tbs)
Unsalted butter 2 Tablespoon
Turkey meatballs 1 Pound , cooked, thawed ((1 batch))

Directions

MAKING

1. Place a large skillet over medium heat, and pour oil. Add onion, garlic, ginger, curry powder, cumin, and hot pepper flakes in it. Sauté for about 4 minutes or until softened.

2. Stir in ground cashews and cook for 1 minute.

3. Add tomatoes, and butter. Mix well and simmer for 5 minutes.

4. Put meatballs right into the skillet, mix to coat well.

5. Put yogurt in it, mix, cover it with lid and allow it to simmer for 5 more minutes.

SERVING

6. Garnish kofta with coriander leaf and serve it hot with rice and naan.
