Canola oil | 1 Tablespoon | |
Onion | 1 Small , finely diced | |
Garlic | 2 Clove (10 gm) , mince | |
Fresh ginger | 1 Tablespoon , grated | |
Curry powder | 2 Teaspoon | |
Cumin | 1 Teaspoon , ground | |
Hot pepper flakes | 1 Teaspoon | |
Raw cashew | 1 Cup (16 tbs) , ground | |
Tomato | 1 Can (10 oz) , crushed | |
Salt | 1 Teaspoon | |
Low fat plain yogurt | 3/4 Cup (12 tbs) | |
Unsalted butter | 2 Tablespoon | |
Turkey meatballs | 1 Pound , cooked, thawed ((1 batch)) |
MAKING
1. Place a large skillet over medium heat, and pour oil. Add onion, garlic, ginger, curry powder, cumin, and hot pepper flakes in it. Sauté for about 4 minutes or until softened.
2. Stir in ground cashews and cook for 1 minute.
3. Add tomatoes, and butter. Mix well and simmer for 5 minutes.
4. Put meatballs right into the skillet, mix to coat well.
5. Put yogurt in it, mix, cover it with lid and allow it to simmer for 5 more minutes.
SERVING
6. Garnish kofta with coriander leaf and serve it hot with rice and naan.
