Fish Kebabs


For marinade
Onion 1 , very finely chopped
Garlic clove 1 Large , crushed
Oil 1/4 Pint (150 Milliliter / 2/3 Cup)
White wine 4 Fluid Ounce (100 Milliliter / 1/2 Cup)
Lemon 1 , rind grated and juiced
Chopped parsley 1 Ounce (1 Heaped Tablespoon)
Chopped fennel 1 Teaspoon
Halibut steak/Other firm white fish 2 Pound , skinned and boned (1 Kilogram)
Small onions 8 Ounce , blanched and quartered (225 Gram, 1/2 Pound)
Tomatoes 12 Ounce , skinned and thickly sliced (350 Gram, 3/4 Pound)
Bay leaves 4



1. Start by cutting the halibut into 2.5-€”4-cm/1-1 1/2-inch cubes


2. To prepare the marinade, take a pan, and in it saute the onion and garlic in oil, then add the remaining ingredeints

3. In the marinade, place the halibut along with the onions, cover and leave for 2-3 hours in a cool place

4. Once the time passes by take out the marinated fish and arrange on the kebab skewers, alternating with onions, tomatoes and bay leaves

5. Place the skewers on a grill pan, and grill for 7-10 minutes on each side till the fish is cooked properly

6. In hot cooked rice, place the kebabs and pour cooked juice if remaining


7. Serve with an orange sauce or tartar sauce, if liked
