Ingredients

Lamb/Beef /veal 2 Pound , well minced
Onions 2 , grated
Salt To Taste
Pepper To Taste
Ground cinnamon/Allspice 1 teaspoon /ground cumin and ground coriander
Oil/Butter 2 Tablespoon (as required)
Tomato concentrate 2 1/4 Ounce (1 tin)
Parsley 4 Tablespoon , finely chopped
Water 1/2 Pint

Directions

GETTING READY

1) Preheat the oven to 375 °F.

2) In an electric blender, place onions and meat.

3) Process the meat mixture to a very soft paste.

4) Sprinkle with salt, pepper to taste and cinnamon or allspice (or the cumin and coriander).

5) Stir the spices in the meat mixture thoroughly.

MAKING

6) In a large baking tray, smear the meat mixture evenly in the bottom, flattening it with a wooden spoon.

7) Make the meat layer to 3/4 to 1 inch thick.

8) Mark the meat with butter shavings.

9) Bake in the oven for 40 minutes or until the surface of the meat is browned.

10) In a bowl, mix together tomato concentrate with half a pint of water.

11) Stream the tomato mixture over the meat.

12) Place the loaf back in the oven and bake for about 10 minutes, or until the tomato sauce is absorbed and the meat is cooked.

13) Invert the loaf on a large serving plate and cut it into squares.

SERVING

14) Serve hot with mashed or roast potatoes or a selection of salads, garnished with chopped parsley if desired.
