Seafood Kebabs

Ingredients

Bacon (streaky) rashers 6 , derinded
Sole fillets 12 Ounce , skinned and cut into 1 inch pieces (350 Grams)
Prawns in shell 12 , cooked
Scallops 6 , halved, if large
Bay leaves 18
Lemon wedges 12 Small
Rosemary sprig 1
Seafood sauce 1/2 Cup (8 tbs) (1 Quantity, For Serving)
For the basting sauce
Lemon 1 , grated rind and juice
Olive oil 1/4 Pint (150 Milliliter)
Bay leaf 1
Parsley sprig 1
Sprig thyme 1

Directions

MAKING

1) With the back of a knife, stretch the bacon rashers and cut in half.

2) Wrap around the pieces of sole.

3) On 6 skewers, alternately arrange the fish with the bay leaves and lemon wedges.

4) Combine the basting ingredients and brush over the kebabs.

5) Grill for 5 minutes on each side, basting regularly.

SERVING

6) Serve hot with seafood sauce.
