Chipotle Shrimp, Ripe Mango and Sweet Onion Kebabs

Ingredients

Extra jumbo black tiger shrimp 12 Large , thawed
Sweet onion chipotle barbecue sauce 1 Cup (16 tbs)
Sweet onion 1 Cup (16 tbs) , quartered, layers separated
Ripe mango 1 Large , peeled, pitted, cut into 3/4 inch pieces
Lime 2 Medium , sliced (into 1/2 inch round)
Canola oil 1 Tablespoon
Cracked black pepper 1/2 Teaspoon
Green onion 2 Tablespoon , finely chopped
Cilantro 2 Tablespoon , finely chopped

Directions

GETTING READY

1) Preheat the barbecue to high.

MAKING

2) In a bowl, combine the shrimp and barbecue sauce, turning to coat evenly.

3) Thread the skewers, alternating shrimp, onion and mango. Finish each skewer with a slice of lime.

4) Lightly brush the skewers with canola oil and season with pepper.

5) Grill for 2 to 3 minutes per side, until the shrimp just turns opaque.

SERVING

6) Sprinkle the skewers with the green onion and cilantro to serve.
