Lemon juice | 1/2 Cup (8 tbs) | |
Grated lemon rind | 1/2 Teaspoon | |
Olive oil | 3 Tablespoon | |
Minced fresh parsley | 1 1/2 Cup (24 tbs) | |
Minced scallions | 3/4 Cup (12 tbs) | |
Cherry tomatoes | 2 Cup (32 tbs) | |
Lettuce leaves | 4 | |
Parsley sprigs | 2 (For Garnish) |
Place the bulgur, water, lemon juice, lemon rind, and oil in a large bowl.
Set aside to soak for about 30 minutes or until the liquid is absorbed.
Toss the soaked bulgur with the parsley, scallions, and cherry tomatoes until well mixed.
