Fried rice is one of the most popular dishes in Chinese cuisine. My version is packed with veggies like beans carrots, green pepper and broccoli and chicken and can be customized to your taste.


Garlic cloves 3 , crushed
Spring onion 4 , bulbs and leaves sliced separately
Chicken 6 Ounce , cut into cubes and marinated in soy sauce
Mixed vegetable 2 Cup (32 tbs) (sliced green beans, broccoli florets, diced green pepper and diced carrots)
Egg 2 , beaten
Cooked jasmine rice 3 Cup (48 tbs) (day old pre cooked rice used)
Light soy sauce 2 Tablespoon
Dark soy sauce 1 Tablespoon
Chili paste 1 Teaspoon



1.  Heat some Chilli oil and add 3-4 cloves of crushed garlic

2.  Add 4-5 sliced Spring Onion bulbs Add the chicken and a 1-2 tsp of Soya sauce for color and cook it well, if using cooked Chicken, add it later just before adding the rice

3.  Add the veggies starting with the 1 cup of Green beans first as they take the longest to cook, followed by Broccoli florets, Carrots & green Pepper and stir fry till cooked.

4.  Slide the veggies to one side, beat 2 eggs and add them into the wok and cook it Cover with 2 cups of cooked Jasmine rice Add the dark and light Soya and Chilli paste and stiry fry till there is no rice uncoated



5.  Garnish with the remaining Spring Onion leaves.
