These meatballs are flavoured with classic Red Curry ingredients like Galangal, Ginger, Lemongrass, Red Chillies, Kaffir Lime, Fish sauce and Shrimp paste and are paired with a wonderful Coconut based Red Curry dipping sauce.

Bread crumbs | 1/2 Cup (8 tbs) | |
Red curry paste | 3 Tablespoon | |
Coriander stems | 2 Tablespoon | |
Shallots | 3 Tablespoon , finely diced | |
Coconut oil | 1 Teaspoon | |
Chopped shallots | 1 Teaspoon | |
Red curry paste | 2 Tablespoon | |
Coconut milk | 3 Tablespoon | |
Thai basil leaves | To Taste |
MAKING
1. Add the ground Chicken to a bowl and add the fresh breadcrumbs, Coriander stems, Shallots and 3 tbsps Red Curry paste with some salt to taste2. Mix well and drop into all purpose flour, using this to help form these into meatball shapes.3. Either drop in hot oil(5-7 mins) or bake(12 mins)4. Make the dipping sauce by heating the Coconut oil and sautéing 1 tsp of finely diced Shallots and adding the Coconut milk5. Allow the milk to thicken before adding 2 tbsps of Red Curry paste6. Add fish sauce and some chiffonade of Basil leaves.
SERVING
7. Serve hot.
