Delicious chicken satay recipe that is both easy and healthy! Chicken breast marinated in turmeric, garlic, and soy sauce then grilled and served with a peanut dipping sauce.
|For the chicken satay|
|Boneless skinless chicken breasts||2 , sliced lengthwise|
|Soy sauce||1 Tablespoon|
|Fish sauce||2 Teaspoon|
|Minced garlic||1 Teaspoon|
|Grated fresh ginger||1 Teaspoon|
|For the peanut sauce|
|Peanut butter||1/4 Cup (4 tbs) (smooth or chunky)|
|Coconut milk||1/4 Cup (4 tbs) (low fat or full fat)|
|Dried red chilies||2 , crumbled (or|
|Soy sauce||1 Dash|
1.Soak 8 bamboo skewers in water for 30 minutes.
2.In a large bowl, place the chicken; add soy sauce, honey, fish sauce, garlic and ginger and turmeric. Toss to coat and allow marinating 30-60 minutes.
3.For the peanut sauce in a medium bowl, combine together all the ingredients and set aside.
4.Skewer chicken strips and cook on a hot grill until nicely charred and cooked through.
5.Serve hot with peanut sauce.
You can skip the peanut sauce and serve these instead with bottled sweet chili sauce, which can be found in most large grocery stores in the Asian foods section.
