Chicken Satay With Peanut Sauce

Delicious chicken satay recipe that is both easy and healthy! Chicken breast marinated in turmeric, garlic, and soy sauce then grilled and served with a peanut dipping sauce.

Ingredients

For the chicken satay
Boneless skinless chicken breasts 2 , sliced lengthwise
Soy sauce 1 Tablespoon
Honey 1 Tablespoon
Fish sauce 2 Teaspoon
Minced garlic 1 Teaspoon
Grated fresh ginger 1 Teaspoon
Turmeric 1/2 Teaspoon
For the peanut sauce
Peanut butter 1/4 Cup (4 tbs) (smooth or chunky)
Coconut milk 1/4 Cup (4 tbs) (low fat or full fat)
Lime 1
Dried red chilies 2 , crumbled (or
Soy sauce 1 Dash

Directions

GETTING READY

1.Soak 8 bamboo skewers in water for 30 minutes.

2.In a large bowl, place the chicken; add soy sauce, honey, fish sauce, garlic and ginger and turmeric. Toss to coat and allow marinating 30-60 minutes.

MAKING

3.For the peanut sauce in a medium bowl, combine together all the ingredients and set aside.

4.Skewer chicken strips and cook on a hot grill until nicely charred and cooked through.

SERVING

5.Serve hot with peanut sauce.

NOTES:

You can skip the peanut sauce and serve these instead with bottled sweet chili sauce, which can be found in most large grocery stores in the Asian foods section.
