Delicious chicken satay recipe that is both easy and healthy! Chicken breast marinated in turmeric, garlic, and soy sauce then grilled and served with a peanut dipping sauce.
For the chicken satay | ||
Boneless skinless chicken breasts | 2 , sliced lengthwise | |
Soy sauce | 1 Tablespoon | |
Honey | 1 Tablespoon | |
Fish sauce | 2 Teaspoon | |
Minced garlic | 1 Teaspoon | |
Grated fresh ginger | 1 Teaspoon | |
Turmeric | 1/2 Teaspoon | |
For the peanut sauce | ||
Peanut butter | 1/4 Cup (4 tbs) (smooth or chunky) | |
Coconut milk | 1/4 Cup (4 tbs) (low fat or full fat) | |
Lime | 1 | |
Dried red chilies | 2 , crumbled (or | |
Soy sauce | 1 Dash |
GETTING READY
1.Soak 8 bamboo skewers in water for 30 minutes.
2.In a large bowl, place the chicken; add soy sauce, honey, fish sauce, garlic and ginger and turmeric. Toss to coat and allow marinating 30-60 minutes.
MAKING
3.For the peanut sauce in a medium bowl, combine together all the ingredients and set aside.
4.Skewer chicken strips and cook on a hot grill until nicely charred and cooked through.
SERVING
5.Serve hot with peanut sauce.
NOTES:
You can skip the peanut sauce and serve these instead with bottled sweet chili sauce, which can be found in most large grocery stores in the Asian foods section.
