Grilled chicken skewers (chicken kebabs) with a simple spice rub. The spice rub keeps chicken breast chunks tender and juicy, and I add onions, peppers and jalapeños for more spice!
Boneless, skinless chicken breast/Chicken thighs | 2 Pound , cut into into 1 inch pieces, 36 cubes | |
Button mushrooms | 12 Large , clean and wipe | |
Red bell peppers | 1 , cut into eighths | |
Onion | 1 , cut into eighths | |
Jalapenos | 2 , cut into 4 thick circles | |
Vegetable oil spray | 1 | |
For spice rub: | ||
Salt | 1 Teaspoon | |
Ground cumin seed | 1 Teaspoon | |
Paprika | 1/4 Teaspoon | |
Turmeric | 1/4 Teaspoon | |
Cinnamon | 1/4 Teaspoon | |
Crushed red pepper flakes | 1/4 Teaspoon |
GETTING READY:
1.Preheat the grill to 450-500F.
MAKING:
2.Using mortar and pestle, combine salt, cumin seed, paprika, turmeric, cinnamon, pepper flakes and mix well.
3.Coat the chicken cubes with 3/4th of prepared spice rub.
4.Sprinkle little oil and remaining spice rub over mushroom. Mix well.
5.Thread skewers as shown in the video. Mushrooms followed by red bell pepper, 2 chicken cubes, jalapeno slice, 2 chicken cubes and onions.
6.Grill over hot grill for 6 minutes with lid covered. Turn the other side and grill for another 4 minutes.
