Asian Daikon Radish Salad

This Refreshing Asian Daikon Radish Salad is an amazing side dish that will complement any stewed or grilled meat. It's pungent, fragrant and full of vitamins and minerals that our body requires in this cold weather.

Ingredients

Carrots 2 Large
Daikon radish 1 Small
Turnips 3
Parsnips 2
For the dressing
Green onions 2
Roasted sesame seeds 1/4 Cup (4 tbs) , roasted in a teaspoon of sesame oil
Fresh turmeric root 2 Inch
Fresh ginger 2 Inch
Garlic cloves 2
Chili pepper 1 (can be adjusted as per taste)
Coconut sugar 2 Teaspoon
Rice vinegar 1/4 Cup (4 tbs)
Sesame oil 1/4 Cup (4 tbs)

Directions

MAKING

1. Peel the carrots, daikon radish and turnips. Using the peeler, cut thin strips from all these vegetables as shown in the video.

2. For the dressing: in a bowl combine chopped green onion, roasted sesame seeds, grated turmeric root, grated ginger, grated garlic, grated chili pepper, coconut sugar, rice vinegar and sesame oil. Mix well.

3. Pour the dressing over the vegetables and toss. Allow the salad to stand for a couple of hours so that all the flavors are well absorbed.

SERVING

4. Serve as a side dish.
