Pork butt | 1 Kilogram , diced and rubbed with magic dust rub | |
Tomatoes | 20 | |
For sauce | ||
Onions | 2 , diced | |
Chopped tomatoes | 2 Can (20 oz) | |
Bell pepper | 2 , diced | |
Olive oil | 2 Tablespoon | |
Vinegar | 1 Tablespoon | |
Garlic | 2 Clove (10 gm) , minced | |
Bbq sauce | 1 Dash | |
Rub | 1 Tablespoon |
GETTING READY
1. Rub onion, bell pepper, pork butt and tomatoes with bbq magic rub and let them marinate overnight.
2. Skewer the marinated pieces in the skewers.
3. Prepare the grill for cooking.
MAKING
4. Place the skewers on direct heat and sear on both sides.
5. Transfer the skewers to the smoker and let it cook.
6. Heat olive oil in a pan. Add onions, peppers and saute them in the pan. Cook for a couple of minutes.
7. Pour beer and canned tomatoes, bbq sauce and cook that through for few minutes.
8. Place the sauce pan on the smoker and dip the skewers on it. Let it cook for a couple of hours.
SERVING
9. Put the skewers on the serving dish and serve.
