Summer Diet Lettuce Rolls or Wraps

Do these rolls just look another ordinary rolls? I do not think so...these rolls look simple but they are super yummy and very satisfying. What if you could prepare Rolls or Wraps without any bread or cheese? Sounds like a great deal, right? Well, I love the combination of hummus and lettuce to prepare healthy diet rolls. These rolls are so yummy and satisfying that you will make them again and again.

Ingredients

Ripe mango 1 , diced
Red onion 1 , diced
Avocado 1 , diced
For hummus
Tahini paste 2 Tablespoon
Garlic cloves 4 , minced
Cooked garbanzo beans 1 1/2 Cup (24 tbs)
Juiced lemon 1
Salt To Taste
Ground cumin 1 Teaspoon
Extra virgin olive oil 1/4 Cup (4 tbs)

Directions

MAKING

1. To a food processor add tahini pasteand pulse for a second.

2. Add garlic, garbanzo beans, lemon juice, salt and cumin, pulse for few seconds. Add olive oil, pulse again until smooth.

3. On a lettuce leaf, spoon a generous amount of hummus, sprinke the diced mango, avocado and onion, wrap the leaf. Repeat to make several rolls.

 

SERVING

4. Serve with additional hummus, if desired.
