Stuffed Artichokes

Artichokes 56 Ounce (4 Large Sized, 14 Ounce / 400 Gram Each)
Lemon juice 1 Tablespoon
White wine/Water 1 Tablespoon
For stuffing
Onion 1 , chopped
Garlic 1 Clove (5 gm) , minced
Finely chopped cooked turkey/Finely chopped cooked chicken 3/4 Pound (2 Cups, 375 Gram)
Sausage meat 1/4 Pound (1/2 Cup, 125 Gram)
Fresh bread crumbs 1/2 Cup (8 tbs)
Egg 1
Chopped fresh parsley 1/4 Cup (4 tbs)
Salt 1/2 Teaspoon
Dried thyme 1/2 Teaspoon
Pepper 1 Pinch


Break off stems of artichoke; cut off 1 inch (2.5 cm) from tops.

Using scissors, cut off tips of leaves.

Brush artichokes with lemon juice.

Place in shallow dish; cover with vented plastic wrap.

Microwave at High for 8 to 10 minutes or until almost tender.

Let stand while preparing stuffing.

Stuffing: In bowl, combine onion and garlic; microwave at High for 1 to 1-1/2 minutes or until softened.

Stir in turkey, sausage, bread crumbs, egg, parsley, salt, thyme and pepper; mix well and set aside.

Using spoon, remove and discard center leaves of each artichoke; scrape out fuzzy center and discard.

Evenly spoon turkey mixture into hollows.

Add wine to baking dish and return artichokes to dish.

Cover with waxed paper and microwave at High for 10 to 12 minutes or until stuffing is firm and cooked through.

Makes 4 servings.

Trim crusts from 2 slices white or whole wheat bread; cut bread into cubes and process in food processor or blender until crumbly.
