Apricot Snowballs

Ingredients

Crushed cornflakes 2 Cup (32 tbs)
Diced pitted dates 1/3 Cup (5.33 tbs)
Diced dried apricots 2/3 Cup (10.67 tbs) (California variety)
Chopped pecans 1/2 Cup (8 tbs)
Honey 1/4 Cup (4 tbs)
Butter/Margarine 3 Tablespoon
Vanilla 1 Teaspoon
Granulated sugar 2 Tablespoon (adjust quantity as needed for rolling)

Directions

MAKING

1. In a bowl, mix together crushed corn flakes, dates, apricots and pecans.

2. In a sauce pan, add honey, butter and heat, add vanilla. Pour this over the cornflake mixture and mix until stiff.

FINALISING

3. Shape into 1 inch balls and roll in granulated sugar and allow to cool.

SERVING

4. Serve cool.
