Apricot Date Balls

Apricot halves 1/2 Cup (8 tbs) , dried (about 12)
Pitted dates 1 1/2 Cup (24 tbs) (about 18)
Canned flaked coconut 3 1/2 Ounce (1 can)
Sugar 1/2 Cup (8 tbs)
Orange peel 1 Tablespoon , grated
Orange juice 1 Tablespoon



1. Rinse and clean the apricots in cold water

2. In a small saucepan, tip in the apricots and simmer with ½ cup water and bring to the boil. Reduce heat and simmer uncovered for 30 minutes till done. Drain the fruits and set the syrup aside

3. In a food grinder, tip in the apricots and dates and process on medium heat till the fruits are pureed.

4. In a medium bowl, place the coconut, 1/4 cup sugar, orange peel and orange juice and mix very well.

5. Shape into 28 balls each of which are 1-1/4 inch in size and set aside to chill. This will take 24 hours or more.


6. Roll in ¼ cup sugar just before serving and serve cold.
